How to make it
- Cut the broccoli into small florets and finely chop the stalks, then steam or blanch them for 3 to 4 minutes until just tender but still bright green, and drain very well.
- Whisk the egg whites with a pinch of salt until light and frothy, then fold in the thinly sliced spring onions, minced garlic, thyme and flour to form a loose batter.
- Gently fold the well-drained broccoli into the egg-white batter and season with salt and freshly ground black pepper.
- Heat the olive oil in a non-stick frying pan over medium heat until shimmering.
- Spoon the mixture into the pan to form small fritters and fry for about 3 to 4 minutes per side, until the egg is fully set and no longer runny and the surfaces are golden; cook egg until firmly set, reaching at least 71 C for safety.
- Drain the fritters briefly on paper towel and keep them warm while you cook the remaining batches.
- Serve hot with lemon wedges on the side.
