How to make it

  1. Pour the neutral oil into a large heavy-bottomed pot and add 3 or 4 kernels, then cover and set over medium-high heat until those test kernels pop, which tells you the oil is hot enough.
  2. Add the remaining kernels in a single layer, cover with the lid slightly ajar to let steam escape, and shake the pot occasionally so the kernels heat evenly and do not scorch.
  3. Continue cooking until the popping slows to roughly two seconds between pops, then immediately remove the pot from the heat to avoid burning.
  4. Tip the hot popcorn into a wide bowl, working in two batches if needed so every piece can be coated evenly.
  5. Drizzle the warm clarified butter over the popcorn while tossing continuously so it clings to the kernels rather than pooling at the bottom.
  6. Sprinkle over the fine salt, brewer's yeast and cayenne, tossing again until the seasoning is evenly distributed.
  7. Scatter the chopped fresh herbs over the top, give one final toss, and serve right away while warm and crisp.
