How to make it

  1. Trim the leeks, reserving the cleaned green tops, then halve the white and pale-green parts lengthwise and slice them; rinse all the leek pieces well in a bowl of cold water to remove grit and drain.
  2. Warm the olive oil in a large pot over medium heat, then add the chopped onion and sliced leek whites and cook gently for 8 to 10 minutes until soft but not browned.
  3. Stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Add the peeled and cubed potatoes, the reserved leek greens, the bay leaf, and the vegetable stock, then bring to a boil.
  5. Reduce the heat to a simmer and cook uncovered for 20 to 25 minutes until the potatoes are completely tender when pierced with a fork.
  6. Remove and discard the bay leaf and the leek greens, then blend the soup until smooth with an immersion blender, or in batches in a countertop blender being careful with the hot liquid.
  7. Stir in the cream, season generously with salt and pepper, warm through over low heat without boiling, and serve hot.
