How to make it
- Peel the potatoes and cut them into roughly 2 cm cubes, then boil them in lightly salted water for about 12 to 15 minutes until just tender but still holding their shape, and drain.
- In a separate saucepan, melt the butter over medium heat, sprinkle in the wheat flour, and stir constantly for about 1 minute to cook out the raw taste without letting it colour.
- Gradually whisk in the milk a little at a time, stirring well after each addition to keep the sauce smooth, then bring it to a gentle simmer so it thickens.
- Season the sauce with the salt and white pepper, then add the drained potatoes and simmer gently for 5 to 8 minutes so they absorb the flavour, stirring carefully to avoid breaking them up.
- Chop the fresh dill finely and stir most of it into the stew, reserving a little for garnish, then taste and adjust the seasoning.
- Serve the potato stew hot in bowls, scattered with the remaining dill, on its own or alongside cured fish or sausages.
