How to make it
- Preheat the oven to 400 F (205 C), scrub the potatoes clean, prick each one several times with a fork, and bake directly on the rack for about 1 hour until tender when pierced.
- Let the potatoes cool just enough to handle, then slice each one in half lengthwise and scoop the flesh into a bowl, leaving a thin shell intact to hold its shape.
- Mash the scooped potato with the butter, milk, garlic powder, and the cubed Velveeta while still hot, stirring until the cheese melts and the mixture is smooth.
- Season the filling with salt and pepper to taste, then spoon it back into the potato shells, mounding it slightly above the rim.
- Top each filled half with the shredded cheddar and a sprinkle of dried parsley flakes.
- Return the stuffed shells to the oven and bake for 15 to 20 minutes until the cheese is melted and bubbling and the tops are lightly golden.
- Let the potatoes rest for a couple of minutes before serving warm.
