How to make it

  1. Preheat the oven to 400 F (205 C), scrub the potatoes clean, prick each one several times with a fork, and bake directly on the rack for about 1 hour until tender when pierced.
  2. Let the potatoes cool just enough to handle, then slice each one in half lengthwise and scoop the flesh into a bowl, leaving a thin shell intact to hold its shape.
  3. Mash the scooped potato with the butter, milk, garlic powder, and the cubed Velveeta while still hot, stirring until the cheese melts and the mixture is smooth.
  4. Season the filling with salt and pepper to taste, then spoon it back into the potato shells, mounding it slightly above the rim.
  5. Top each filled half with the shredded cheddar and a sprinkle of dried parsley flakes.
  6. Return the stuffed shells to the oven and bake for 15 to 20 minutes until the cheese is melted and bubbling and the tops are lightly golden.
  7. Let the potatoes rest for a couple of minutes before serving warm.
