How to make it

  1. Peel and devein the prawns, rinse them, and pat dry; peel the potatoes and cut them into bite-sized chunks.
  2. Heat the oil in a heavy pan and fry the green cardamom, black cardamom and cinnamon for 30 seconds until fragrant, then add the finely chopped onions and cook until golden.
  3. Stir in the garlic and ginger paste for a minute, then add the chopped tomatoes, turmeric, ground coriander and chilli powder and cook until the oil separates from the masala.
  4. Add the potatoes and the water, season with salt, cover and simmer for about 12 to 15 minutes until the potatoes are nearly tender.
  5. Add the prawns and simmer gently, stirring occasionally, for 4 to 6 minutes until they turn pink and opaque and are cooked through.
  6. Taste and adjust the salt, adding a splash more water if you prefer a thinner gravy.
  7. Scatter with chopped fresh coriander and serve hot with rice or flatbread.
