Prawn Curry

How to make it
- Peel and devein the prawns, rinse them, and pat dry; peel the potatoes and cut them into bite-sized chunks.
- Heat the oil in a heavy pan and fry the green cardamom, black cardamom and cinnamon for 30 seconds until fragrant, then add the finely chopped onions and cook until golden.
- Stir in the garlic and ginger paste for a minute, then add the chopped tomatoes, turmeric, ground coriander and chilli powder and cook until the oil separates from the masala.
- Add the potatoes and the water, season with salt, cover and simmer for about 12 to 15 minutes until the potatoes are nearly tender.
- Add the prawns and simmer gently, stirring occasionally, for 4 to 6 minutes until they turn pink and opaque and are cooked through.
- Taste and adjust the salt, adding a splash more water if you prefer a thinner gravy.
- Scatter with chopped fresh coriander and serve hot with rice or flatbread.
