How to make it
- Preheat the oven to 200 C (400 F) and line a 12-cup muffin tin with paper cases or lightly grease the cups.
- In a large bowl whisk together the sifted flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
- In a separate bowl beat the egg lightly, then whisk in the milk, mashed pumpkin, and vegetable oil until smooth.
- Pour the wet ingredients into the dry ingredients and fold together with a spatula just until no streaks of flour remain, taking care not to overmix or the muffins will turn tough.
- Spoon the batter into the prepared cups, filling each about two-thirds full to allow room for rising.
- Bake for 18 to 22 minutes, until the muffins are domed and golden and a skewer inserted into the centre comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool further before serving warm or at room temperature.
