How to make it
- Preheat the oven to 220 C and roll out the pie dough to line a 23 cm pie plate, crimping the edges, then chill the crust while you make the filling.
- In a large bowl whisk the eggs until smooth, then whisk in the pumpkin purée, sugar, pumpkin pie spice, salt and vanilla essence until fully combined.
- Gradually whisk in the milk and cream until the filling is smooth and pourable, taking care not to incorporate too much air which can cause cracking.
- Pour the filling into the chilled crust and place the pie on a baking sheet to catch any spills and make it easier to move.
- Bake at 220 C for 15 minutes, then reduce the oven to 175 C and continue baking for 40 to 50 minutes until the edges are set but the centre still has a slight wobble.
- Check that the custard has reached about 75 C in the centre, or that a knife inserted near the centre comes out mostly clean, then remove the pie from the oven.
- Cool the pie completely on a wire rack for at least 2 hours so the custard fully sets before slicing, and serve at room temperature or chilled with whipped cream.
