How to make it

  1. Mix the masa harina with the salt, then add the warm water gradually and knead for a few minutes until you have a soft, smooth dough that holds together without cracking; cover and rest it for 10 minutes.
  2. Make the filling by combining the shredded cheese, heavy cream, loroco, crumbled bacon and minced garlic in a bowl, mashing lightly so it binds into a cohesive mixture.
  3. Divide the dough into 8 equal balls; flatten one ball into a disc in your palm, place a spoonful of filling in the centre, then fold the edges up and over to seal the filling completely inside.
  4. Gently flatten and pat the filled ball back and forth between your hands into a round about 12 cm across and 1 cm thick, taking care not to let the filling break through.
  5. Heat a dry griddle or heavy skillet over medium heat and lightly oil it, then cook each pupusa for about 3 to 4 minutes per side until golden brown spots form and the cheese inside is melted.
  6. Keep the cooked pupusas warm under a clean towel while you shape and cook the rest.
  7. Serve hot with curtido (pickled cabbage slaw) and a thin tomato salsa on the side.
