How to make it
- Mix the masa harina with the salt, then add the warm water gradually and knead for a few minutes until you have a soft, smooth dough that holds together without cracking; cover and rest it for 10 minutes.
- Make the filling by combining the shredded cheese, heavy cream, loroco, crumbled bacon and minced garlic in a bowl, mashing lightly so it binds into a cohesive mixture.
- Divide the dough into 8 equal balls; flatten one ball into a disc in your palm, place a spoonful of filling in the centre, then fold the edges up and over to seal the filling completely inside.
- Gently flatten and pat the filled ball back and forth between your hands into a round about 12 cm across and 1 cm thick, taking care not to let the filling break through.
- Heat a dry griddle or heavy skillet over medium heat and lightly oil it, then cook each pupusa for about 3 to 4 minutes per side until golden brown spots form and the cheese inside is melted.
- Keep the cooked pupusas warm under a clean towel while you shape and cook the rest.
- Serve hot with curtido (pickled cabbage slaw) and a thin tomato salsa on the side.
