How to make it
- Preheat the oven to 190 C and set a rack in the lower third, then place the frozen pie crust on a baking sheet to catch any drips.
- Prick the base of the crust lightly with a fork and blind-bake it for about 10 minutes until just set and pale gold, which keeps the bottom from turning soggy.
- Meanwhile, whisk the eggs in a bowl until smooth, then whisk in the cream, chopped tarragon, ground nutmeg, salt and pepper until fully combined.
- Scatter the grated swiss cheese evenly over the partially baked crust.
- Slowly pour the egg and cream mixture over the cheese, filling the crust to just below the rim to avoid spills.
- Bake for 30 to 35 minutes until the custard is set around the edges but still has a slight wobble in the very centre and an inserted knife comes out clean, with the centre reaching at least 74 C (165 F) so the egg filling is fully cooked.
- Let the quiche rest for 10 minutes so the filling firms up before slicing, then serve warm or at room temperature.
