How to make it
- Trim and halve the red radishes, peel and dice the white radish into 2 cm pieces, dice the onion finely, and slice the green onions, keeping the green tops separate for garnish.
- Melt the butter in a heavy pot over medium heat and gently sweat the diced onion and white parts of the green onions for 5 minutes until soft but not browned.
- Sprinkle in the flour and stir constantly for 2 minutes to cook out the raw taste and form a pale roux.
- Pour in the white wine while stirring to lift any stuck bits, let it bubble and reduce by half, then gradually whisk in the stock until smooth.
- Add the radishes, bay leaves, and thyme, season with salt and pepper, bring to a gentle simmer, then cover partially and cook for 20 to 25 minutes until the radishes are fork-tender and the stew has thickened.
- Remove the bay leaves, taste and adjust the seasoning, and if you prefer a thicker body mash a few radish pieces against the side of the pot.
- Ladle into bowls and scatter the reserved green onion tops over the top to serve.
