How to make it
- Crush the butter biscuits to fine crumbs, stir in the melted butter until the mixture resembles damp sand, then press it firmly and evenly into the base of a parchment-lined square tin and chill while you make the filling.
- Set aside a handful of the frozen raspberries, then place the remainder in a saucepan with the granulated sugar and most of the water and warm gently until the berries break down and release their juices.
- Slacken the cornstarch with the remaining cold water, stir it into the simmering raspberries, and cook for a minute or two until the mixture turns glossy and thickens into a spoonable compote, then let it cool to room temperature.
- Spread the cooled raspberry layer evenly over the chilled biscuit base and return the tin to the refrigerator to set.
- Whip the cold heavy cream with the vanilla sugar and the cream stabilizer until it holds firm peaks, taking care not to over-beat.
- Spread the whipped cream over the raspberry layer, scatter the reserved berries on top, then chill for at least 3 hours until firm before lifting out and slicing into neat squares.
