How to make it

  1. Heat the oven to 220 C (425 F) and line a baking sheet with parchment paper.
  2. Whisk the self-rising flour, superfine sugar and salt in a bowl, then rub in the cold butter with your fingertips until the mixture looks like coarse crumbs.
  3. Make a well, pour in the cream and milk, and stir gently with a knife just until a shaggy dough forms, then fold in the still-frozen raspberries with as few strokes as possible to avoid streaking the dough pink.
  4. Tip the dough onto a lightly floured surface, pat it to about 3 cm thick, and cut out rounds with a floured cutter, pressing straight down without twisting so they rise evenly.
  5. Arrange the scones on the sheet, brush the tops with beaten egg, and bake for 12 to 15 minutes until risen and golden.
  6. Cool the scones on a rack until just warm so they set without becoming gummy.
  7. Split each scone and serve with raspberry jam and a generous spoon of whipped cream.
