How to make it

  1. Preheat the oven to 175Β°C (350Β°F) and line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy lifting.
  2. Make the jam by simmering the frozen raspberries with 1 tablespoon of the maple syrup and the lemon juice in a small saucepan over medium heat until they break down, about 8 minutes, then stir in the chia seeds and remove from the heat to thicken as it cools.
  3. In a bowl, stir together the almond flour, salt, melted coconut oil, remaining 2 tablespoons of maple syrup and the vanilla until a crumbly, cohesive dough forms.
  4. Press about two-thirds of the dough firmly and evenly into the base of the lined pan to form the shortbread crust, and bake for 12 minutes until just beginning to turn golden at the edges.
  5. Spread the thickened raspberry-chia jam evenly over the warm crust, then crumble the reserved dough over the top to create a streusel-like layer.
  6. Return the pan to the oven and bake for a further 18 to 20 minutes until the topping is golden brown and the jam is bubbling at the edges.
  7. Let the bars cool completely in the pan, then chill for at least 30 minutes before lifting out by the parchment and cutting into squares so the layers hold together cleanly.
