How to make it

  1. Preheat the broiler and line a baking sheet with foil, then lay the bacon out in a single layer and cook it under the broiler or in a skillet until crisp, turning once, about 6 to 8 minutes.
  2. Drain the bacon on paper towels and slice each tomato and the onion into thin rounds.
  3. Lightly toast the bread slices, then spread a thin layer of butter over one side of each.
  4. Lay a slice of American cheese on each piece of buttered toast, then top with a couple of tomato slices, a thin ring or two of onion, a strip or two of bacon, and a season of salt and pepper.
  5. Cover each with a second slice of cheese so it will melt and hold everything together.
  6. Slide the open-faced toasts under the broiler for 2 to 3 minutes, watching closely, until the cheese is bubbling and just beginning to brown at the edges, then serve hot.
