How to make it

  1. Preheat the oven to 190 C (375 F) and lightly grease an ovenproof baking dish.
  2. Trim the rhubarb and cut the stalks into 2 cm pieces, then toss them with the sugar and spread evenly across the base of the dish.
  3. In a bowl, combine the plain flour and wholemeal flour, then rub in the cold cubed butter with your fingertips until the mixture resembles coarse breadcrumbs.
  4. Stir the light brown sugar and ground cinnamon through the crumble mixture until evenly distributed.
  5. Scatter the crumble topping in an even layer over the rhubarb, pressing very lightly but leaving it loose so steam can escape.
  6. Bake for 35 to 40 minutes until the topping is golden and crisp and the rhubarb juices bubble up around the edges.
  7. Let the crumble rest for 10 minutes before serving warm, ideally with custard or cream.
