How to make it
- Preheat the oven to 190 C (375 F) and lightly grease an ovenproof baking dish.
- Trim the rhubarb and cut the stalks into 2 cm pieces, then toss them with the sugar and spread evenly across the base of the dish.
- In a bowl, combine the plain flour and wholemeal flour, then rub in the cold cubed butter with your fingertips until the mixture resembles coarse breadcrumbs.
- Stir the light brown sugar and ground cinnamon through the crumble mixture until evenly distributed.
- Scatter the crumble topping in an even layer over the rhubarb, pressing very lightly but leaving it loose so steam can escape.
- Bake for 35 to 40 minutes until the topping is golden and crisp and the rhubarb juices bubble up around the edges.
- Let the crumble rest for 10 minutes before serving warm, ideally with custard or cream.
