How to make it
- Preheat the oven to 180 C (350 F) and lightly butter a 1.5 litre baking dish.
- Cut the rhubarb into 2 cm pieces and place in a saucepan with 120 g of the granulated sugar, the water and the cinnamon, then cook gently over medium heat for 8 to 10 minutes until the rhubarb has softened into a thick, juicy compote.
- Tear or crumble the stale cake or bread into rough pieces and toss with the melted butter and the remaining 30 g granulated sugar.
- Layer half the buttered crumbs over the base of the dish, spoon the warm rhubarb over them, then top with the remaining crumbs and press down lightly.
- Whisk the egg whites in a clean, grease-free bowl until soft peaks form, then add the caster sugar a spoonful at a time, whisking continuously until the meringue is glossy and holds stiff peaks.
- Spoon the meringue over the pudding, spreading it to the edges to seal and swirling the surface into peaks.
- Bake for 18 to 20 minutes until the meringue is set and golden, then serve warm or at room temperature with cream or custard.
