Rice Water Porridge

How to make it

  1. Rinse the rice under cold running water until the water runs clear to remove surface starch, then drain.
  2. Combine the rice, water, and a pinch of salt in a heavy saucepan and bring to a boil over medium-high heat.
  3. Reduce the heat to low and simmer gently, stirring occasionally, for about 25 to 30 minutes until the rice is very soft and the mixture has thickened into a loose porridge.
  4. Pour in the milk and add the sugar, then continue to simmer for another 8 to 10 minutes, stirring often so it does not stick or scorch on the bottom.
  5. Stir in the nutmeg and vanilla and cook for one more minute, adjusting the consistency with a little extra milk if you prefer it thinner.
  6. Taste and add more sugar if you like it sweeter, then ladle into bowls and serve warm, dusted with a little extra nutmeg.
