How to make it

  1. Heat the oven to 190 C (375 F) and let the turkey breast sit at room temperature for about 30 minutes while you make the stuffing.
  2. Melt a knob of the butter in a pan and gently cook the onion and celery for 6 to 8 minutes until soft, then stir in the chopped dried apples, dried cherries, walnuts and rubbed sage.
  3. In a large bowl combine the crumbled cornbread with the cooked vegetable mixture, then pour over the buttermilk and enough stock to moisten the stuffing without making it soggy, and season well with salt and pepper.
  4. Spoon the stuffing into a buttered baking dish, cover with foil, and set aside (baking it separately rather than inside the bird is safer and keeps it from going dense).
  5. Rub the remaining softened butter all over the turkey breast, season generously with salt and pepper, and set it on a rack in a roasting tin.
  6. Roast the turkey for about 1 1/2 to 1 3/4 hours, basting once or twice, until an instant-read thermometer in the thickest part of the breast reads 74 C (165 F).
  7. Put the covered stuffing in the oven for the last 40 minutes, removing the foil for the final 15 minutes so the top crisps and turns golden.
  8. Tent the turkey loosely with foil and let it rest for 15 to 20 minutes before carving, then serve the sliced breast alongside the warm cornbread stuffing.
