How to make it
- In a saucepan, whisk together the sugar, cocoa powder, and salt, then gradually whisk in the milk until smooth and warm the mixture over medium heat, stirring, just until the sugar dissolves; do not boil.
- Remove from the heat, add the chopped semisweet chocolate, and stir until fully melted and the base is glossy, then stir in the vanilla.
- Whisk in the heavy cream, then cover and chill the base thoroughly in the refrigerator for at least 4 hours or until very cold, as a cold base churns into a smoother ice cream.
- Pour the chilled base into an ice cream maker and churn according to the manufacturer's directions, usually 20 to 25 minutes, until it reaches the texture of soft serve.
