How to make it

  1. Stir the yeast and sugar into the lukewarm water and let it stand for about 10 minutes until foamy.
  2. In a large bowl combine the flour and salt, then make a well and pour in the yeast mixture, the olive oil, and half of the chopped rosemary.
  3. Mix to a shaggy dough, then turn out onto a floured surface and knead for about 8 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover, and let it rise in a warm spot for about 1 hour until doubled in size.
  5. Punch down the dough, shape it into a round loaf on a lined baking tray, scatter over the remaining rosemary, cover loosely, and let it rise again for 30 minutes.
  6. Preheat the oven to 200 C and bake the loaf for 25 to 30 minutes until golden and hollow-sounding when tapped on the base.
  7. Brush the hot crust with the melted butter and let the bread cool on a rack for at least 10 minutes before slicing.
