Rosemary Garlic Pork Roast

How to make it
- Take the pork loin out of the refrigerator about 30 minutes before cooking and pat it thoroughly dry with kitchen paper so it browns well.
- Make a paste by mashing together the minced garlic, finely chopped rosemary, olive oil, cider vinegar, salt and black pepper.
- Rub the paste all over the pork, working it into every surface, then let it sit while you preheat the oven to 200°C (400°F).
- Lightly coat a roasting rack and pan with non-stick cooking spray and set the pork on the rack fat-side up.
- Roast for about 25 minutes, then lower the temperature to 175°C (350°F) and continue roasting for a further 30 to 40 minutes, until a thermometer in the centre reads 63°C (145°F).
- Transfer the roast to a board, tent loosely with foil and let it rest for at least 10 minutes so the juices redistribute and the temperature rises slightly.
- Carve the rested pork into thin slices across the grain and spoon over any resting juices before serving.
