How to make it

  1. Take the pork loin out of the refrigerator about 30 minutes before cooking and pat it thoroughly dry with kitchen paper so it browns well.
  2. Make a paste by mashing together the minced garlic, finely chopped rosemary, olive oil, cider vinegar, salt and black pepper.
  3. Rub the paste all over the pork, working it into every surface, then let it sit while you preheat the oven to 200°C (400°F).
  4. Lightly coat a roasting rack and pan with non-stick cooking spray and set the pork on the rack fat-side up.
  5. Roast for about 25 minutes, then lower the temperature to 175°C (350°F) and continue roasting for a further 30 to 40 minutes, until a thermometer in the centre reads 63°C (145°F).
  6. Transfer the roast to a board, tent loosely with foil and let it rest for at least 10 minutes so the juices redistribute and the temperature rises slightly.
  7. Carve the rested pork into thin slices across the grain and spoon over any resting juices before serving.
