How to make it
- Preheat the oven to 180 C (350 F) and line two 20 cm round tins with baking paper, then lightly grease the paper with butter.
- Beat the eggs and granulated sugar with an electric mixer for 5 to 6 minutes until very pale, thick and tripled in volume.
- Sift together the potato flour, cocoa powder and baking powder, then fold them gently into the egg mixture with a spatula, keeping as much air as possible.
- Divide the batter evenly between the two tins and bake for 20 to 22 minutes until the sponges spring back when lightly pressed and a skewer comes out clean.
- Turn the cakes out onto a wire rack, peel off the paper and leave them to cool completely before assembling.
- Whip the cold double cream with the icing sugar until it holds soft peaks, taking care not to over-whip.
- Place one sponge on a serving plate, spread over half the whipped cream, top with the second sponge and finish with the remaining cream, then dust with a little extra cocoa before serving.
