How to make it

  1. In a heavy saucepan over low heat, melt the margarine together with the unsweetened baking chocolate, stirring constantly until smooth, then remove from the heat.
  2. Whisk the granulated sugar into the warm chocolate mixture, then let it cool for a few minutes so it will not cook the eggs.
  3. Beat in the eggs one at a time followed by the vanilla, stirring well after each addition until the batter is glossy.
  4. In a separate bowl, whisk together the flour, baking powder and salt, then stir the dry ingredients into the saucepan just until a soft dough forms.
  5. Cover and chill the dough in the refrigerator for at least 1 hour until it is firm enough to roll into balls.
  6. Preheat the oven to 175 C (350 F) and line baking sheets with parchment paper, then place the powdered sugar in a shallow bowl.
  7. Roll the chilled dough into walnut-sized balls, toss each generously in the powdered sugar to coat, and space them about 5 cm apart on the sheets.
  8. Bake for 10 to 12 minutes until the tops are puffed and crackled but the centers are still soft, then cool on the sheet for 5 minutes before transferring to a rack.
