How to make it

  1. Combine both flours, the yeast and salt in a bowl, add the cold water and oil, and mix to a rough dough, then knead for about 10 minutes until smooth and elastic.
  2. Cover the dough and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
  3. Meanwhile, pat the shrimp dry and season lightly with salt; preheat the oven to its highest setting, around 250C, with a baking tray or stone inside.
  4. Knock back the dough, divide into two, and stretch each piece into a thin round on a floured sheet of parchment.
  5. Spread tomato sauce over each base leaving a border, scatter over the mozzarella, then arrange the shrimp, flaked tuna and sliced red onion on top.
  6. Slide each pizza onto the hot tray and bake for 10 to 12 minutes until the crust is crisp and golden and the shrimp are pink, opaque and cooked through.
  7. Drizzle with a little extra olive oil, slice, and serve immediately.
