Seafood Pizza

How to make it
- Combine both flours, the yeast and salt in a bowl, add the cold water and oil, and mix to a rough dough, then knead for about 10 minutes until smooth and elastic.
- Cover the dough and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
- Meanwhile, pat the shrimp dry and season lightly with salt; preheat the oven to its highest setting, around 250C, with a baking tray or stone inside.
- Knock back the dough, divide into two, and stretch each piece into a thin round on a floured sheet of parchment.
- Spread tomato sauce over each base leaving a border, scatter over the mozzarella, then arrange the shrimp, flaked tuna and sliced red onion on top.
- Slide each pizza onto the hot tray and bake for 10 to 12 minutes until the crust is crisp and golden and the shrimp are pink, opaque and cooked through.
- Drizzle with a little extra olive oil, slice, and serve immediately.
