How to make it
- Stir the yeast and sugar into the warm water (about 40 C / 105 F, comfortably warm to the touch but not hot) and let it stand for 8 to 10 minutes until it turns foamy, which confirms the yeast is alive.
- In a large bowl whisk together the semolina flour, bread flour and salt, then pour in the yeast mixture and the vegetable oil and stir with a wooden spoon until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead firmly for 8 to 10 minutes until it becomes smooth and elastic; semolina makes a slightly tacky dough, so resist adding too much extra flour.
- Place the dough in an oiled bowl, cover with a damp cloth and leave in a warm spot for about 1 to 1 1/2 hours until it has roughly doubled in size.
- Knock back the dough, shape it into a tight round or torpedo loaf, set it on a parchment-lined tray, cover loosely and let it rise again for 35 to 45 minutes until puffy.
- Heat the oven to 220 C (425 F). Beat the egg with a teaspoon of water, brush it over the loaf, scatter the sesame seeds on top and slash the surface once or twice with a sharp knife.
- Bake for 28 to 35 minutes until deep golden and hollow-sounding when tapped underneath; an instant-read thermometer should reach about 95 C (200 F) in the centre. Cool on a wire rack for at least 20 minutes before slicing.
