How to make it

  1. Preheat the oven to 190 C and generously butter the insides of four small individual ovenproof ramekins.
  2. Spoon 1 tablespoon of cream into the bottom of each ramekin and warm them on a baking sheet in the oven for about 2 minutes until the cream is just hot.
  3. Carefully crack two eggs into each ramekin, taking care not to break the yolks, then season lightly with salt and pepper.
  4. Scatter the grated gruyere and the bread crumbs evenly over the tops and dot with a little of the butter.
  5. Place the baking sheet in the oven and bake for 10 to 14 minutes, until the whites are fully set and opaque but the yolks remain slightly soft, or longer if you prefer firm yolks.
  6. Remove from the oven, let the shirred eggs rest for 1 minute, scatter the chopped chives over the top, and serve warm in the ramekins.
