How to make it

  1. Beat the softened butter and white sugar together in a large bowl until pale and creamy, about 3 to 4 minutes.
  2. Beat in the egg white until fully combined, then stir in the salt and ground nutmeg.
  3. Add the flour a little at a time, mixing just until the dough comes together into a soft, slightly stiff mass; gather it into a disc, wrap, and chill for 30 minutes.
  4. Preheat the oven to 180 C (350 F) and line two baking sheets with parchment paper.
  5. Roll the dough out on a lightly floured surface to about 5 mm thickness and cut into rounds with a 6 to 7 cm cutter, re-rolling the scraps.
  6. Arrange the rounds on the prepared sheets, leaving a little space between each, and sprinkle the tops with the extra sugar.
  7. Bake for 12 to 15 minutes until the edges are just turning golden, then cool on the sheets for 5 minutes before transferring to a rack to crisp.
