How to make it

  1. Pat the shrimp dry, season with half the salt and the white pepper, and finely chop the garlic, ginger and onion while thinly slicing the spring onions.
  2. Heat 1 tablespoon of oil in a large wok or skillet over high heat and stir-fry the shrimp for 2 to 3 minutes until they turn pink and opaque throughout, then remove to a plate.
  3. Add another tablespoon of oil, pour in the beaten eggs and scramble quickly until just set, then break them up and push to the side of the pan.
  4. Add the remaining oil with the garlic, ginger and onion and stir-fry for about 1 minute until fragrant, then add the peas and carrots and cook for 2 minutes more.
  5. Tip in the cold rice, breaking up any clumps with the back of your spatula, and toss everything over high heat for 3 to 4 minutes until the grains are hot and separate.
  6. Return the shrimp and eggs to the pan, drizzle the soy sauce around the edge, and toss to combine and heat through evenly.
  7. Season with the remaining salt to taste, scatter over the sliced spring onions, and serve immediately.
