How to make it

  1. Bring the water to a rolling boil in a large pot and add the salt.
  2. Add the spaghetti, stirring to keep the strands separate, and cook according to package directions until al dente, usually 9 to 11 minutes.
  3. While the pasta cooks, pour the pasta sauce into a saucepan with the vegetable oil and warm it over medium-low heat, stirring occasionally, until heated through.
  4. Reserve about half a cup of the starchy cooking water, then drain the spaghetti in a colander.
  5. Return the drained spaghetti to the pot and pour over the warmed sauce, tossing to coat every strand and adding a splash of the reserved pasta water if it needs loosening.
  6. Divide among four bowls and finish with grated parmesan to taste.
