How to make it

  1. Pat the pork chops dry and rub them all over with a mix of the smoked paprika, garlic powder, salt and black pepper.
  2. Heat the olive oil in a skillet over medium-high heat and sear the chops for about 2 minutes per side until well browned, then transfer them to the slow cooker.
  3. Slice the onion and scatter it with the dried apple rings over and around the chops in the slow cooker.
  4. In a bowl, stir together the apple cider vinegar, white wine, Worcestershire sauce and brown sugar until the sugar dissolves, then pour the mixture over the pork.
  5. Cover and cook on low for 6 to 7 hours, until the pork is fork-tender and an instant-read thermometer reads at least 63 C (145 F).
  6. Transfer the chops to a platter and let them rest for 5 minutes while you spoon the apples and onions over the top.
  7. If you want a thicker sauce, pour the cooking liquid into a pan and simmer for a few minutes to reduce before spooning it over the chops.
