How to make it

  1. Cream the softened butter and sugar together with an electric mixer until light and fluffy, about 3 minutes.
  2. Beat in the egg and the vanilla extract until fully combined, scraping down the bowl as needed.
  3. Whisk the flour, baking powder and salt together in a separate bowl, then add to the butter mixture in two batches, alternating with the milk, mixing only until a soft dough forms.
  4. Gather the dough into a disc, wrap it, and chill in the refrigerator for at least 1 hour until firm enough to handle.
  5. Preheat the oven to 190 C and line two baking sheets with parchment, then roll the dough out on a lightly floured surface to about 1 cm thick and cut into rounds.
  6. Arrange the cookies a few centimetres apart and bake for 8 to 10 minutes, until the tops look set but the edges are still pale; do not let them brown.
  7. Let the cookies firm up on the sheet for 5 minutes before transferring to a rack to cool completely, then ice or dust with sugar as desired.
