Soy Protein Bread

How to make it
- Crumble the fresh yeast into the warm milk with the sugar, stir to dissolve, and let it stand for about 10 minutes until foamy.
- Soak the ground soy protein in a little warm water for 10 minutes, then squeeze out any excess so it is moist but not wet.
- In a large bowl combine the flour, salt and rehydrated soy protein, then make a well and add the yeast mixture, the oil and one beaten egg.
- Mix into a shaggy dough, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Cover the bowl and let the dough rise in a warm place for about 1 hour until it has roughly doubled in size.
- Knock back the dough, shape it into a loaf, place it in an oiled loaf tin and let it prove for a further 30 minutes; meanwhile heat the oven to 200 C.
- Brush the top with the remaining beaten egg and bake for 30 to 35 minutes until golden and hollow-sounding when tapped, then cool on a wire rack before slicing.
