How to make it

  1. Preheat the oven to 175 C / 350 F and line an 8-inch square baking tin with parchment paper, leaving an overhang for easy lifting.
  2. Cream the softened infused butter with the sugar in a bowl until pale and fluffy, then beat in the eggs one at a time followed by the vanilla.
  3. In a separate bowl, sift together the flour, cocoa powder, baking powder and salt so the dry ingredients are evenly combined.
  4. Fold the dry ingredients into the wet mixture in two additions, alternating with the milk, mixing only until no dry streaks remain so the cake stays tender.
  5. Pour the batter into the prepared tin, level the top, and bake for 25 to 30 minutes until a skewer inserted in the centre comes out with just a few moist crumbs.
  6. Cool the cake completely in the tin before lifting it out and cutting it into clearly portioned squares, and label it plainly so no one eats it unknowingly; begin with a single small piece and wait at least an hour before considering more, keeping it well out of reach of children and pets.
