How to make it

  1. Stir the sugar and yeast into the lukewarm water and leave it for about 10 minutes until a layer of foam forms on the surface, confirming the yeast is active.
  2. Put the spelt flour and salt into a large bowl, make a well in the centre, and pour in the yeast liquid along with the olive oil.
  3. Mix to a shaggy dough, then turn it out and knead for 6 to 8 minutes until smooth, working gently as spelt has a more delicate gluten than wheat.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and leave in a warm spot for about 1 hour until almost doubled in size.
  5. Knock back the dough, shape it into a loaf, and place it in a greased loaf tin or on a lined tray, then cover and prove for a further 30 to 40 minutes.
  6. Meanwhile preheat the oven to 220C (425F), and just before baking dust the top with a little flour and slash it lengthways with a sharp knife.
  7. Bake for 30 to 35 minutes until golden and the loaf sounds hollow when tapped underneath, then cool on a wire rack before slicing.
