How to make it

  1. If starting from dry spelt, rinse and simmer in plenty of salted water for about 45 minutes until tender, then drain well and let cool; you need roughly 250 g cooked.
  2. Finely chop the leek, onion, garlic and deseeded red chilli, then soften them in 1 tablespoon of the olive oil over medium heat for 6 to 8 minutes until the leek is collapsed and the onion is translucent; let cool slightly.
  3. Tip the cooked spelt into a large bowl and lightly mash about a third of the grains with a fork or potato masher so the mixture will bind, leaving the rest whole for texture.
  4. Add the softened vegetables, oat flakes, beaten egg, ground cumin, black pepper and salt, then mix thoroughly and rest the mixture for 15 minutes so the oats absorb moisture.
  5. With damp hands, divide and shape the mixture into 4 firm patties about 2 cm thick, pressing well so they hold together.
  6. Heat the remaining 2 tablespoons of olive oil in a non-stick frying pan over medium heat and cook the patties for 4 to 5 minutes per side until deeply golden and heated through.
  7. Toast the burger buns cut-side down in the same pan, then serve each patty in a bun with your choice of salad leaves, tomato and a yoghurt or mustard sauce.
