How to make it

  1. Peel and dice the pumpkin and sweet potato into roughly equal 2 cm cubes, and finely chop the onion and garlic.
  2. Melt the butter in a large pot over medium heat, add the onion and cook for 5 to 6 minutes until soft and translucent, then add the garlic and cook for another minute.
  3. Stir in the flour, curry powder, cumin and nutmeg and cook for 1 to 2 minutes, stirring constantly, until the spices are fragrant and the flour is coated.
  4. Add the pumpkin and sweet potato cubes, pour in the stock and stir well, scraping the bottom of the pot to lift any spices.
  5. Bring to the boil, then reduce to a simmer and cook uncovered for about 20 minutes, until the vegetables are completely tender when pierced with a knife.
  6. Blend the soup until silky smooth with a stick blender, or in batches in a jug blender, then return it to the pot.
  7. Stir in the cream, warm through gently without boiling, then season to taste with salt and black pepper and serve.
