Spicy Fried Wings

How to make it
- Pat the chicken wings thoroughly dry with paper towels and, if you like, separate them into drumettes and flats, discarding the wing tips.
- In a large bowl beat the egg, then toss the wings in it to coat evenly.
- In a separate bowl combine the flour, cayenne, smoked paprika, lemon pepper, black pepper, lemon zest and salt, then dredge the egg-coated wings in the seasoned flour, pressing so the coating adheres, and rest them on a rack for 10 minutes.
- Heat the oil in a deep heavy pot to 175 C / 350 F, using a thermometer to keep the temperature steady.
- Fry the wings in batches without crowding the pot for about 8 to 10 minutes, turning occasionally, until deep golden brown and crisp.
- Check that the wings are cooked through to an internal temperature of at least 74 C / 165 F, then lift them out onto a wire rack or paper towels to drain.
- Sprinkle with a little extra salt and lemon pepper while still hot, and serve immediately with a cooling dip and lemon wedges.
