Spinach and Ricotta Lasagna

How to make it

  1. Heat the olive oil in a saucepan over medium heat, add the minced garlic and cook for about 1 minute until fragrant, then pour in the blended tomatoes and oregano, season with salt and pepper, and simmer for 20 minutes until thickened.
  2. Squeeze the thawed spinach hard to remove as much water as possible, then chop it roughly.
  3. In a bowl, beat the eggs, then mix in the ricotta, the spinach, half the parmesan, the nutmeg and a good pinch of salt and pepper to make the filling.
  4. Preheat the oven to 190 C (375 F) and spread a thin layer of tomato sauce over the base of a baking dish.
  5. Layer in lasagna sheets, then a third of the ricotta-spinach filling, a spoonful of sauce and a scatter of mozzarella, and repeat to build three layers, finishing with sheets topped with the remaining sauce, mozzarella and parmesan.
  6. Cover the dish tightly with foil and bake for 30 minutes, then remove the foil and bake for a further 15 to 20 minutes until bubbling and golden on top.
  7. Let the lasagna rest for 10 minutes so it sets before cutting into squares and serving.
