How to make it
- Thaw the frozen chopped spinach completely, then squeeze it firmly in a clean kitchen towel to remove as much water as possible so the filling stays thick.
- In a bowl, beat the egg, then stir in the ricotta, half of the mozzarella, the parmesan, minced garlic, Italian seasoning, salt and pepper until evenly combined, and fold in the drained spinach.
- Preheat the oven to 220 C (425 F) and line a baking sheet with parchment paper.
- Divide the pizza dough into four pieces and roll each into a circle about 18 cm across on a lightly floured surface.
- Spoon a quarter of the filling onto one half of each circle, scatter on the remaining mozzarella, then fold the dough over to form a half-moon and press and crimp the edges tightly to seal.
- Brush the tops with olive oil, cut two small steam vents in each calzone, and bake for 18 to 22 minutes until deep golden brown.
- Let the calzones rest for 5 minutes before serving, as the filling will be very hot straight from the oven.
