How to make it

  1. Slice the rib-eye thinly across the grain, then toss it in a bowl with 1 tablespoon of the soy sauce, the cornstarch, salt, and black pepper, and let it marinate for 15 minutes.
  2. Heat a wok or large skillet over high heat until smoking, then add 1 tablespoon of the peanut oil and swirl to coat.
  3. Add the beef in a single layer and stir-fry for 2 to 3 minutes until browned and just cooked through, then transfer it to a plate.
  4. Add the remaining tablespoon of oil to the hot pan, then stir-fry the minced ginger and garlic for about 30 seconds until fragrant.
  5. Add the red and green bell pepper strips and stir-fry over high heat for 2 to 3 minutes until crisp-tender but still bright.
  6. Return the beef to the pan, pour in the remaining 2 tablespoons of soy sauce, and toss everything together for 1 minute until hot and well coated.
  7. Taste and adjust the seasoning, then serve immediately over steamed rice.
