How to make it
- Place the basmati rice in a bowl, cover with cold water, and swirl with your hand until the water turns cloudy. Drain and repeat 3 or 4 times until the water runs nearly clear, then leave the rice to soak for 20 minutes and drain well.
- Crumble the saffron threads into 2 tablespoons of warm water and let them steep so the color and aroma develop while you prepare the rice.
- Combine the drained rice, the measured water, salt, and lemon juice in a heavy saucepan with a tight-fitting lid. Bring to a boil over medium-high heat, stirring once to stop the grains sticking.
- As soon as it boils, reduce the heat to the lowest setting, cover, and steam undisturbed for 12 minutes without lifting the lid.
- Remove from the heat and let the rice sit, still covered, for 5 minutes to finish steaming in its own trapped heat.
- Drizzle the saffron water and dot the butter over the rice, then fluff gently with a fork to separate the grains and distribute the saffron streaks before serving.
