Steamed Buns with BBQ Pork

How to make it
- In a large bowl combine the flour, yeast, sugar and baking powder, then gradually stir in the warm water and oil and bring it together into a dough.
- Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic, then cover and leave in a warm place for 1 to 1.5 hours until doubled in size.
- Meanwhile, make the filling by warming the shredded pork in a pan with the barbecue sauce, soy sauce, teriyaki sauce, garlic chili sauce and five spice powder until thick and sticky, then let it cool completely.
- Punch down the risen dough, divide it into 8 equal pieces and roll each into a ball, then flatten each into a disc that is thicker in the centre than at the edges.
- Place a spoonful of the cooled filling in the centre of each disc, gather the edges up and pleat them around the filling, then pinch firmly to seal and set each bun seam-side down on a square of parchment.
- Cover the buns and let them rest for 20 to 30 minutes until slightly puffy.
- Arrange the buns in a steamer basket leaving space between them, then steam over rapidly boiling water for 12 to 15 minutes until risen and fluffy, and turn off the heat and wait 5 minutes before lifting the lid so they do not collapse.
