How to make it

  1. Trim the pork tenderloin and slice it thinly against the grain into bite-sized pieces, then mince the ginger.
  2. In a heatproof bowl, toss the pork with the black bean and garlic sauce, light soy sauce, rice wine or water, sugar, cornstarch, ginger and vegetable oil until evenly coated, and let it marinate for 15 minutes.
  3. Wash the mustard greens well, trim the tough ends, and cut them into bite-sized lengths, then arrange them in the bottom of a heatproof dish that fits your steamer.
  4. Spread the marinated pork evenly over the greens and pour the 2 tablespoons of water around the edge of the dish.
  5. Set up a steamer with simmering water and place the dish inside, then cover and steam over medium-high heat for 12 to 15 minutes.
  6. Check that the pork is cooked through with no pink remaining and reaches at least 63 C (145 F), steaming a few minutes longer if needed.
  7. Carefully remove the hot dish, give everything a gentle stir to coat the greens in the sauce, and serve immediately with steamed rice.
