How to make it

  1. In a bowl mix the curd cheese with the egg and salt until smooth, then work in the flour gradually to form a soft, slightly sticky dough; cover and chill for 20 minutes.
  2. Hull the strawberries and pat them dry; if they are large, leave them whole but trim so they form a neat centre for each dumpling.
  3. On a floured surface roll the dough into a log, cut it into 12 equal pieces, and flatten each into a small disc in your palm.
  4. Place a strawberry in the centre of each disc, then wrap the dough fully around the fruit and roll between your hands to seal it into a smooth ball with no gaps.
  5. Bring a large pot of lightly salted water to a gentle boil, lower in the dumplings, and simmer for 6 to 8 minutes until they float and the dough is cooked through.
  6. While they cook, melt the butter in a wide pan over medium heat, add the breadcrumbs, and toast them with the sugar for 3 to 4 minutes until golden and fragrant.
  7. Lift the cooked dumplings out with a slotted spoon, draining well, then roll them in the buttery sweet breadcrumbs to coat and serve warm.
