How to make it

  1. Hull the strawberries and slice them, then toss with the sugar, lemon juice and lemon zest in a bowl and let them macerate at room temperature for about 20 minutes until the fruit releases its juices.
  2. Tip the macerated strawberries and all their syrup into a blender, add the vanilla and a small pinch of salt, and blend until completely smooth.
  3. Push the puree through a fine sieve into a clean bowl to remove the seeds, pressing with the back of a spoon to extract as much as possible.
  4. Whisk the Greek yogurt and the orange liqueur into the strained puree until the mixture is uniform and silky, then cover and chill in the refrigerator for at least 1 hour.
  5. Pour the cold mixture into an ice cream maker and churn for 20 to 25 minutes until it thickens to a soft-serve consistency.
  6. Transfer the frozen yogurt to a freezer-safe container, smooth the top, press parchment against the surface and freeze for 2 to 3 hours until firm enough to scoop.
  7. Let the frozen yogurt sit at room temperature for 5 minutes to soften slightly before scooping and serving.
