How to make it

  1. Preheat the oven to 190 C. Halve the courgettes lengthways and scoop out the centres with a spoon, leaving a sturdy shell about 1 cm thick; chop the scooped flesh and reserve.
  2. Finely dice the onion, pepper, and tomatoes, and mince the garlic. Heat the olive oil in a frying pan over medium heat and soften the onion and pepper for about 6 minutes.
  3. Add the garlic and reserved courgette flesh and cook for 3 minutes more, then stir in the tomatoes and dried herbs and simmer until the mixture is thick and most liquid has evaporated.
  4. Fold the cooked brown rice through the vegetables, season well with salt and pepper, and remove from the heat.
  5. Arrange the courgette shells cut side up in a baking dish, season lightly, and spoon the filling into each, mounding it slightly. Scatter the grated cheese over the top.
  6. Pour a few tablespoons of water into the base of the dish and cover loosely with foil. Bake for 25 minutes, then remove the foil and bake a further 10 to 15 minutes until the shells are tender and the tops are golden.
  7. Let the stuffed courgettes rest for 5 minutes before serving.
