How to make it

  1. In a bowl, beat the cream cheese with the powdered sugar and 1 teaspoon of the vanilla until smooth and spreadable.
  2. Spread the cream cheese mixture generously over 4 of the brioche slices, then top with the remaining slices to form 4 sandwiches.
  3. In a wide shallow dish, whisk together the eggs, heavy cream, milk, granulated sugar, cinnamon, salt, and the remaining 1 teaspoon of vanilla until fully blended.
  4. Soak each sandwich in the custard for about 20 to 30 seconds per side, letting the bread absorb the liquid without falling apart.
  5. Melt the butter in a large nonstick skillet over medium-low heat, then cook the sandwiches for 3 to 4 minutes per side until deeply golden and the egg custard is set through.
  6. Transfer to plates, dust with extra powdered sugar, and serve warm with maple syrup or fresh berries.
