Sweet Peach Cobbler

How to make it
- Preheat the oven to 190 C (375 F) and lightly grease a 1.5 litre baking dish.
- In a bowl, toss the sliced peaches with the granulated sugar, cornstarch, cinnamon and lemon juice until evenly coated, then spread them into the prepared dish.
- In a separate bowl, whisk together the flour, topping sugar, baking powder and salt.
- Pour in the melted butter and milk and stir just until a thick, smooth batter forms, being careful not to overmix.
- Spoon the batter over the peaches in rough dollops, leaving some gaps so the fruit peeks through and the topping can spread as it bakes.
- Bake for 40 to 45 minutes until the topping is golden and set and the peach filling is bubbling around the edges.
- Let the cobbler rest for at least 15 minutes so the filling thickens, then serve warm, ideally with a scoop of vanilla ice cream.
