How to make it
- Preheat the oven to 200 C (400 F) and line a baking sheet with parchment paper.
- In a large bowl whisk together the flour, sugar, cream of tartar, baking soda, cinnamon, nutmeg and salt until evenly combined.
- Rub the cold cubed butter into the dry ingredients with your fingertips until the mixture resembles coarse breadcrumbs.
- In a separate bowl beat the egg with the pumpkin puree and corn syrup, then pour it into the dry mixture and stir gently with a fork just until a soft, slightly sticky dough comes together, taking care not to overwork it.
- Turn the dough onto a lightly floured surface, pat it into a round disc about 2 cm thick, and cut it into 8 wedges with a sharp knife.
- Arrange the wedges on the prepared sheet a few centimetres apart and brush the tops lightly with a little beaten egg or milk if you like a glossy finish.
- Bake for 15 to 18 minutes until risen and golden and a skewer inserted into the centre comes out clean, then cool on a wire rack before serving.
